  • toasted bread - the typical, white toast bread that you also use for egg and cress sandwiches
  • sourdough bread - yum!
  • rye bread - although I recommend using more sauce in this case
  • rolls - although these might be small, you can make more small-sized portions to snack on through the day
  • pitta - lamb and pitta go hand-in-hand. Don't shy away from this Middle Eastern bread

Description

If you've made roast lamb but don't know what to do with the leftovers, then make this easy leftover lamb sandwich recipe. This sandwich is next-level!

Ingredients

  • 8 bread slices
  • 30g (1 oz) arugula/rocket/watercress, washed
  • 60ml (4 tbsp) sprouted pulses
  • 2 avocados, peeled and sliced
  • 4 cooked lamb slices
  • 20ml (4 tsp) blackcurrant jam

Instructions

  1. Arrange the salad leaves evenly across the first slice of bread.
  2. Sprinkle with 15ml (1 tbsp) sprouts.
  3. Top with slices of ½ avocado and season.
  4. Place a slice of meat on top.
  5. Cover the second slice of bread with jam.
  6. Place the jammy bread on top of the sandwich. Tada!
