I don't remember when frozen blueberries, straight out of the freezer, became such a favorite snack item around here, butsometimesthere are tears shed from my toddlers when we run out. My boys could eat a plate full at every meal if I let them, and I probably wouldn'tmind since a cup of blueberries is only 80 calories. They make for excellent finger foods, they are simple, brightly colored, and sweetly delicious, naturally! I like that there is nothing else I have to do besides open a bag and pour them into a bowl for my kids to enjoy. Good thing blueberries are in season year-round and always easy to find in grocery stores, or else I'd be in big trouble.

To say we love blueberries around here is an understatement, so I'm thrilled to share with you a fantastic recipe of ours below that has no added sugars, is safe for new eaters, and is definitely a hot item with even the pickiest toddlers. My Toddler Approved Blueberry Muffins are quick and easy, and are a healthy option for all ages!

Eating more healthy is certainly a goal of mine for this new year. Pregnancy always throws me off a little, starting with horrible morning sickness, food aversions, and then weird cravings, and by the end of it, I wonder if I ate anything healthy at all the entire 9 months. When this baby comes at the end of the month, I'm committed to paying a lot more attention to what I'm eating, but I'm going to start with little changes instead of an entire diet overhaul. My main goal is to focus on a serving of fruits or vegetables with absolutely every meal, and blueberries could play a big part in this goal. They really do make a perfect snack since they are so low-calorie and high on fiber. I'm planning on keeping my freezer stocked and a fresh bowl always in the fridge. I don't think it will be hard at all to incorporate more blueberries into my diet if I just think to toss a few into my cereal or yogurt, throw a handful in a bag on my way out the door, and consciouslygo for them first when I need a snack.

Toddler Approved Blueberry Muffins

A delicious blueberry muffin recipe that has no added sugars and is toddler-approved.

Servings 12 -15 muffins

Ingredients

  • 1 ½cupsflour
  • ½cupsoats
  • 1T.cinnamon
  • 1t.baking soda
  • 1t.baking powder
  • 2bananas
  • 1egg
  • 1cupunsweetened applesauce
  • ¼cupapple juice
  • ¼cupmelted butter
  • 1 ½cupsblueberriesfresh or frozen

Instructions

  1. Combine dry ingredients and set aside. Beat the wet ingredients together, then combine with the dry ingredients, just until moistened.

  2. Fold in the blueberries last and spoon into baking cups.

  3. Bake at 370 degrees for 30 minutes.

    Hi! I have made this recipe a few times before and it has been a hit with my two year old, thanks we love it!! I have a question will it still turn out if i replaced the flour with whole wheat flour instead? Would it be the same measurements?? I want it to be a go to for my daughter but wanted her to get her whole grains in as much as i can sneak them, hehe. Thank you very much for your time!
