Traeger Double Smoked Ham

My easy Traeger Smoked Ham Recipe is glazed with a delicious maple champagne glaze and smokes right on your wood-pellet grill for a tender, juicy, double-smoked ham that your entire family will enjoy.

How to smoke a ham

Most of the hams you will buy in the major groceries stores are going to be pre-cooked, pre-smoked hams. They are typically the kind that say you can slice and serve them immediately, and they are also known as “City Hams”.

Since these hams are already fully cooked and smoked, all you really need to do is re-heat the ham in order to serve it. We do it slowly and on a Traeger wood-pellet grill so it can pick up even more rich smokey flavors, and stay tender and juicy until it is time to slice and serve.

The maple champagne glaze makes things just a little sweet and is the perfect sauce to serve alongside the ham once it is heated through and sliced.

Since the hams we’d be using are already smoked once during the cooking process, what we are making here is actually a double-smoked ham.

How long should you smoke a ham?

How long you need to cook smoked ham on a bbq depends first on what type of ham you are cooking. If you are cooking a fresh or country ham, these directions won’t apply.

To double-smoke a city ham, just start your smoker or pellet-grill and place your ham on it. I like to cook mine in a pan with about a cup of cooking liquid inside. I used prosecco, but have also used hard cider and regular apple juice as well, very successfully.

FAQs

When to glaze a double smoked ham? ›

After the meat reaches that 130° to 135°F internal temperature, place the ham in a grilling safe dish - this can be an aluminum pan, cast iron skillet, or aluminum lined baking pan – and brush on the glaze. Boss Tip: This can take about an hour or two, depending on size of your ham.

How long to cook a precooked ham on a Traeger grill? ›

Insert the probe into the center of the ham. Place the roasting pan on the grill grates, close the lid, and cook for 1 1/2 hours. Open the grill lid and glaze the ham with the maple syrup mixture. Close the lid again and continue cooking until the internal temperatures reaches 135℉, about 30 minutes more.

How long to smoke a fully cooked ham on a pellet grill? ›

A good rule of thumb is to smoke the ham at a temperature of 225-250°F for 30 minutes per pound. This means a 10-pound ham will take around five hours to smoke.

How do you use the glaze packet that comes with the ham? ›

Whether you heat your spiral ham in the slow cooker or oven, all you have to do is open the glaze packet and apply it 30 minutes before your ham is finished cooking. By the time it's ready to serve, you'll have a satiny-glazed ham without any of the time or effort it takes to make a ham glaze.

Do I cover ham when I glaze it? ›

Brush ham all over with ⅓ Glaze (Glaze will have thickened so return to heat to loosen, about 30 seconds). Leave ham uncovered to caramelize surface and bake until the ham reaches an internal temperature of around 140 degrees F, approximately 20-30 minutes, spooning juices over ham every 10 minutes.

Do you wrap a ham in foil to smoke? ›

Once ham has been basted and wrapped in aluminum foil, place it back on the smoker and cook for 1 hour at 225 degrees. After 1 hour and your ham reaches 140 degrees internal, it's time to glaze.

How long do you smoke a precooked ham at 225? ›

Once your grill or smoker reaches a temperature of 225, place the ham on the grate. If the Ham is fully cooked, smoke for one hour. How long does it take to smoke a ham that's uncooked? If it's been brined and prepared, expect to smoke for up to 7 hours, until it reaches 145 degrees Fahrenheit.

Can you smoke a ham that is already fully cooked? ›

Smokiness: most store-bought hams are already smoked (and thus a pre-cooked ham), so we are essentially bringing your store-bought ham up to temp (needs to reach 140 internal temp) on a smoker which will infuse additional smokiness into the ham!

What happens if you don't cover ham with foil? ›

If you don't cover your ham while cooking it will quickly dry out. Instead: Put some aluminum foil over your ham while it's cooking. It is recommended that the ham is covered for at least half of the cooking process and only removed during the last half when you glaze it.

Is it better to cook ham at 275 or 350? ›

Generally, you will bake at 275° F for 12-15 minutes per pound. Most hams come with baking directions that you can follow, but most will fall within these guidelines. You're going to want the internal temperature to be 145° F for pre-cooked ham and 160° F if cooking an uncooked ham.

What to spritz smoked ham with? ›

With that in mind, what I tend to use and find is the best spritz for smoking is apple cider vinegar but water will work as well, or a 50/50 mix. Another great alternative is apple juice where the sugars in the juice also add another level of flavour to your bark.

How to cook a fully cooked ham on a Traeger? ›

We recommend heating your ham up on the Traeger to give it additional wood-fired flavor. What temperature should I cook my ham at and how do I know if it's done? In general, it's best to reheat ham gently so as to not dry it out. Most Traeger recipes recommend setting the cook temperature to around 325°F.

How long to cook a 10 lb fully cooked ham? ›

Pre-Cooked and Bone-In Ham

If the ham is a half ham weighing five to seven pounds, it should heat at 325°F for 22-25 minutes per pound. If it is a whole ham weighing between 10 to 14 pounds, heat the ham at 325°F for 18-20 minutes per pound. The internal temperature should be 140°F.

What should the internal temperature of a double smoked ham be? ›

Place the ham in a 325°F oven for approximately 10-15 minutes per pound or until the ham reaches an internal temperature of 135-140°F as measured with a food thermometer. Baste ham occasionally during cooking time with accumulated juices. We recommend finishing with a glaze later on.

When should I glaze a precooked ham? ›

The glaze should not be applied until the final hour to 30 minutes, in order to avoid burning the sugars. What you're going to do with the glaze ingredients is just combine most of them into a paste, and then apply it to the ham. After that, the heat in your oven will take care of everything.

Should a smoked ham be covered while baking? ›

If you don't cover your ham while cooking it will quickly dry out. Instead: Put some aluminum foil over your ham while it's cooking. It is recommended that the ham is covered for at least half of the cooking process and only removed during the last half when you glaze it.

Can you overcook a glazed ham? ›

Can you overcook a glazed ham? Yes, you can. Overcooked ham can become dry. Cook the ham for 1 hour at 200ºC or until warmed through, basting it every 15 minutes.

Will ham glaze thicken as it cools? ›

Allow to boil at a low temperature 15 minutes or until dark and slightly thickened. (Mixture will thicken more upon standing). Cool at least 20 minutes before glazing ham. This allows the mixture to thicken which will coat the ham better.
